Aluminum, for instance, is easier to maintain than copper and is less expensive, but it is not as efficient in conducting heat properly as a copper cookware.
Copper bottom cookware pans are usually layered with tin, nickel, or stainless steel or a combination of these metals. Just a note of precaution, one has to take good care of old copper cookware though. If the tin on the top has worn through to the copper, the pan should be retired and never be used for cooking again. The reason is that copper can be toxic, if acid foods are cooked on the surface. This can count as one disadvantage against copper cookware. In order to fix this, you must seek the services of people specialized in polishing and repairing the worn-out tin areas of old copper cookware.
Copper cookware is extremely popular all over the world. The French people are famous for their copper cookware. It’s no longer a secret why traditional French cuisine is so delectable!
With the increased availability of cookware that’s made out of other materials like aluminum and stainless steel, copper cookware is really facing tough competition. But this nostalgic piece of kitchen ware will not go the way of dodo, or just a photograph in the history books, at least for now. In fact, it continuously innovates itself. Today copper cookware generally means cookware which has lots of stainless steel in combination with copper. Usually, the copper is on the outside. Stainless steel is used on the cooking surface. Copper cookware items require some amount of maintenance to keep them looking new. It is relatively easier o keep clean with modern polishes, which keep them sparkling.
